Eco-friendly meal trays at Lenôtre
Innovation: the new Lenôtre meal trays are recyclable and biodegradable
In September 2010, Lenôtre launched a new collection of eco-friendly meal trays. Lenôtre is therefore scaling up its eco-responsibility approach, one of whose objectives is to “position the brand as sustainable development leader on the upscale catering market”, summarises Didier Ferré, sustainable development Director at Lenôtre.
Five "Coup de Coeur” box menus (Frêne, Chêne, Hêtre, Charme and Thalassa) prepared under the supervision of Guy Krenzer, executive chef and creation director, are served on trays whose packaging has been entirely redesigned to minimise their ecological footprint. The trays are made of 100% biodegradable cardboard. Inside, the containers, lids, cutlery and covers are made of 100% biodegradable cornstarch. The glasses, which contain no heavy metals, are fully recyclable.
By choosing 100% biodegradable and/or recyclable materials to make its trays, Lenôtre improves their environmental balance throughout their lifecycle. These environmental gains were calculated by the company Ecobilan: greenhouse gas emissions related to tray production are reduced by 50% and energy consumption is reduced by 25%. The cost of the trays, however, remains unchanged, since the lower cost of cardboard offsets the higher cost of cornstarch.
